Ingredients

  • Coconut oil - 1 Tablespoon

  • Ground turkey - 1 Pound

  • Zucchini - 1 Large

  • Baby spinach - 1 Cup

  • Shredded carrots - 1 Cup

  • Turmeric - 0.5 Teaspoon

  • Egg - 1 Each

  • Cooked rice - 3 Cups


Instructions

  1. Heat a large skillet or pot over medium-high heat.

  2. Add in the coconut oil and turkey, and sauté until browned and cooked through, about 10 minutes.

  3. Reduce the heat to medium and stir in the zucchini, spinach, carrots, and turmeric.

  4. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.

  5. Turn off the heat and crack in the egg. Let the egg cook in the hot food, then mix it around to ensure it mixes through and cooks thoroughly.

  6. Stir in the rice until everything is well combined.

  7. Cool and serve!
